can you make a country wine based on a meat?
October 19, 2008 - i have recently started making country wines and was amazed at the vast amount of fruits, veggies, flowers, leaves and other stuff on which many recipes are based i've even read about a roman fish wine but couldnt find the recipe. i have not however found a recipe for a wine based on meat such as pork, beef or chicken etc.
Does anybody know if this is posible or even have a recipe i could try?
As a wine maker you are well aware of the fermentaion process (sugars in fruit or other plants converted to alcohol). Animal meats do not contain the sugars needed, but proteins and fats. You would end up with a rotten sludge. Maybe the Romans pickled fish and drank the brine or used it as flavoring.
I made wine from most things as you say flowers, vegetables and even silver birch tree sap which was really nice but never from any kind of meat, never ever saw a recipe in any book. PS please don't try onion wine its terrible, unless you are going to add it to a stew or something, no I didn't try it but two members of my club tried it, ugh. cheers
the roman fish wine you refer to was actually a type of fish paste and used to cover the smells of often badly stored meat dishes,apperently it stank to high hell ,but was still better than the smell of the meat and never ever heard of a wine based on meat ,you will only end up with gravy..AHH BISTO!

having made wine myself i had a good look at the books ( i have quite a few) and no mention of fish or meat wines, only fish in wine would be isinglass which is fish gelatine to clear the wine. although you can make wine from almost anything else, fruit, vegetables, pulses, beans(coffee included), leaves, herbs, spices and dried fruit. even if you could ferment meat you would need to add so much sugar i can't imagine it would be nice. but if you did find one i'm sure my dad would be interested as he's fermented everything he could lay his hands on for years.
