Can cold stored wine be brought to room temperature and given for a charity auction without ruining it?
October 10, 2008 - I have some cold stored bottles of wine that I want to use for a charity bingo. Can I bring them to room temperature without destroying the taste?
- Yes. Wine doesn't skunk like beers does. Just so long as it doesn't get too hot you'll be fine.
- Not sure I really understand the problem. But remember most wine is sold from a retail store at room tempature. They are often transported at much lower temps. Assuming the type of wine, and it should be consumed at room temperature you should have no problems.
Wine is more resilient than most people think. Assuming you are not dealing with extreme temperature - freezing temperature or anything over say 95 degree F, wine usually can do fine. Crystalizing it with freezing or having high heat can destroy wine or at least age it rapidly. Even if wine is in that extreme condition, drinking it fairly soon after that may still be OK. The limiting factor involves primarily in the cork. Cork keeps the air out of wine bottle. Air in wine bottle oxidizes the wine and make it a vinager. So, if you have a leak in a cork, wine can go bad quickly. Cork do not do well under extreme condition. A lot of people made the mistake by storing their wine is regular refrigerator, which shrinks the cork due to the cold temperature with low humidity. So, to make sure the wine is still good, look at the cork (if you can). If you did store the wine appropriately at a wine cellar or wine refrigerator, bringing them to room temperature will be OK. Most of the wine will go through several changes of temperature - from its fermentation/barrel stage to its bottling in the vineyard, transported to your local store and kept in cool room temperature, then to your site of storage. As long as you don't make sudden change in temperature of the wine, it will be OK. Also, serve wine in room temperature - that is, Europe's room temperature, which runs mid 60-low 70's. Do not serve any wine in a room temperature in the summer - a 80-90 degree wine is full of alcohol and nasty tasting.
